3 Vegan Meals to Power You Through Your Day!

Being vegan in college does not have to be difficult or expensive. Follow me throughout my day to see what I eat to fuel me through a busy day of exercising, classes, and studying!

My day beings at 8:00 when my alarm goes off. After laying in bed for 10 to 30 minutes (depending on how good my TikTok feed is) I like to start my day with a bowl of chia seed pudding. I like to make this the night before to allow for a hassle-free morning. The best part of this nutritious breakfast is the flexibility; you can put whatever toppings you have laying around and its always delicious! This breakfast also is extremely filling and powers me through my workout.


CHIA SEED PUDDING: 
3 tbsp Chia Seeds 
1/4 cup Coconut Milk 
1/2 Banana, sliced 
1/2 cup Blueberries
1 tbsp Cocoa Nibs 
1 tbsp Peanut Butter
-Mix chia seeds and coconut milk together, add more milk if desired. Throughly coat all chia seeds. 
-Place in fridge overnight, or one hour minimum 
-Remove from fridge and top with banana, blueberries, cocoa nibs, peanut butter

After breakfast, I get ready for my workout. Today, I went on a 20 minute run followed by a 20 minute walk and 10 minutes of core. Following my workout, I have class from 10:00-10:50 where I aim to drink 1 to 2 big glasses of water.


Once class is over, I have an hour break before my next class begins. During this time I like to do some homework or prepare for the next class. My second class of the day runs from 12:00-12:50.


At around 1:00 I start preparing my lunch. I like this meal to be super filling because I normally have a longer break in-between lunch and dinner and want to make sure I am not starving by dinner time. Today I made BBQ No Evil's No Chicken Comrade Cluck (seitan) with rice, broccoli, and spinach.

BBQ Vegan Chicken w/rice & veggies
5oz. No Evil Comrade Cluck No Chicken 
2 tbsp Sugar Free BBQ sauce 
1 1/2 cups broccoli
2 cups baby Spinach 
-cook rice and steam broccoli 
-sauté Comrade Cluck in skillet with oil, add sauce after cooked to liking 
-sauté spinach with salt, pepper, garlic powder, and onion powder

Following lunch, I like to relax for an hour I typically spend this time watching HGTV or Food Network. The rest of my day consisted of two meetings one at 2:00pm and the other at 6:30pm. After the last meeting I prepared dinner. For dinner, I had tofu with fajitas, rice, and guacamole.

Tofu with Fajitas: 
2/5 tofu from package seasoned with cumin, garlic powder, and onion powder 
1/2 cup of white rice 
1/2 bell pepper (any color) 
1/2 cup red onion
2 tbsp guacamole 
-Cook rice, fajitas, and tofu 
-place in bowl top with guac
